This is a recipe for a successful full broccoli soup, suitable for those who like to maintain a diet, with a vegetarian and vegan menu alike.
1 tablespoon olive oil
1 large chopped onion
3 cloves peeled and chopped garlic
280 grams of chopped broccoli
1 peeled and sliced apple
4 cups boiling water
1 tablespoon vegetable soup powder
¼ A teaspoon of ground nutmeg
Salt and pepper to taste
Heat the olive oil in a large pot and fry the onions and garlic until caramelized.
Add the broccoli, potatoes, some vegetable soup powder to the pot, mix and bring to boil.
Reduce the flame and cook for 15 minutes until the vegetables are softened.
Grind the mixture with a blender rod or food mixer, until a smooth and uniform layer is obtained.
Return the mixture to the pot and heat again for about 5 minutes on a low flame.
Season with nutmeg, salt, and pepper to taste, remove from the heat and serve hot.
