Vegan French toast (The addictive version)

Use gluten-free bread and certified gluten-free flour to make this delicious vegan French toast.

Servings 2-3 

Ingredients

6 slices day-old ciabatta bread, sliced thick

1 cup Almond Milk

1 tablespoon maple syrup

2 tablespoons spelt or whole wheat flour

1 tablespoon nutritional yeast

1 teaspoon cinnamon

¼ teaspoon nutmeg

tiny pinch of salt

coconut oil, for the pan

Toppings:

Powdered sugar

Vegan butter

Maple syrup

Fresh fruit

How to prepare

Whisk together the almond milk, maple syrup, flour, nutritional yeast, cinnamon, nutmeg, and salt in a small mixing dish.

Place the bread in a shallow dish (with sides) large enough to contain it all. Pour the mixture over the bread, then lift or turn it to ensure that all sides are coated evenly.

In a large pan, heat a drizzle of coconut oil over medium heat. Add the bread pieces to the heated pan and cook for a few minutes each side, until golden brown.

Serve with a dusting of powdered sugar, vegan butter, maple syrup, and fresh fruit.
