Chunky vegan chocolate chip pretzel cookies

The addition of applesauce gives these chocolate cookies a chewy, moist, and sticky texture that will leave you wanting more.

Ingredients

½ cup softened vegan butter

½ cup brown sugar

½ cup sugar

¼ cup applesauce

2 teaspoons vanilla extract

2 cups flour

1 teaspoon baking soda

½ teaspoon salt

½ teaspoon cinnamon

2 teaspoons vanilla extract

1½ cups vegan chocolate chips

⅓ cup roughly chopped pretzels

How to prepare:

Preheat the oven to 375 degrees and grease a large baking sheet with cooking spray. Whisk together butter and sugar in a large bowl until smooth. Whisk in the applesauce and vanilla extract once more.

Add flour, baking soda, salt, and cinnamon, and mix using a rubber spatula. Chocolate chips and pretzels are folded in.

Using a tablespoon, pour cookie batter onto the prepared baking sheet, leaving 1 inch of space between each cookie. Bake for 11 to 12 minutes, or until golden brown around the edges.

Remove from the oven and allow to cool for 3 minutes before serving.
