Ingredients:
1 cup lentils
4 cups vegetable broth
2 cups spinach
1 onion, chopped
2 garlic cloves, minced
1 tablespoon olive oil
Salt and pepper to taste
How to prepare:
In a large pot, sauté the onion and garlic in olive oil until tender.
Add the lentils and vegetable broth and bring to a boil.
Reduce heat and let simmer for 20-30 minutes or until lentils are tender.
Add the spinach and stir until wilted.
Season with salt and pepper to taste.
