Vegan Southern Fried Cabbage

Vegan Southern Fried Cabbage is a flavorful meatless version of the Southern Classic dish. It is easy to prepare using a combination of sauteing and stewing cabbage with onion, garlic, and herbs in a vegetable broth.

Ingredients:

1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

1/2 teaspoon dried thyme

1 medium cabbage, chopped

1/2 teaspoon smoked paprika

1/2 teaspoon onion powder

1/4 teaspoon garlic powder

1/4 teaspoon Cayenne pepper

1/2 cup vegetable broth

1 teaspoon salt, or to taste

1/4 cup vegan coconut bacon

How to prepare:

Heat oil in a large skillet over medium heat. Add onions, garlic, and thyme and simmer for two minutes, or until the onions are tender. Add cabbage, paprika, onion powder, garlic powder, cayenne pepper, and salt to the skillet.

Add vegetable broth, cover, and simmer cabbage for 10 minutes, or until tender. Add coconut bacon to the dish, then serve.
