Vegan marshmallow – coconut cream popsicles

These delightful, kid-friendly pops from For the Love of evoke recollections of marshmallow fluff as a child. Want to raise the bar? Add a touch of bourbon to make it alcoholic. 

Ingredients:

½ cup aquafaba

¼  teaspoon of cream of tartar

¼ cup

½ cup canned

¼ teaspoon extract

How to prepare:

Using a hand mixer, combine aquafaba and cream of tartar in a medium bowl. When the liquid begins to foam, gradually add sugar. Continue beating the mixture at high speed until stiff peaks form.

Slowly add coconut milk into the bowl while the mixer is running, and then stir in vanilla. Pour into popsicle molds, leaving space at the top for expansion. Insert sticks and freeze for a minimum of four hours, or until frozen.

When ready to serve, run molds briefly under warm water to loosen the popsicles, then remove and enjoy.
