1 cup cooked lentils
1 onion, chopped
2 garlic cloves, minced
1 tablespoon olive oil
1 cup vegetable broth
2 cups mashed potatoes
Salt and pepper to taste
How to prepare:
Preheat the oven to 375°F.
In a large skillet, sauté the onion and garlic in olive oil until tender.
Add the lentils and vegetable broth and bring to a boil.
Reduce heat and let simmer for 15-20 minutes or until lentils are tender.
Add the mixed vegetables and simmer for an additional 5-7 minutes.
Transfer the lentil mixture to a casserole dish and spread the mashed potatoes on top.
Bake for 25-30 minutes or until the potatoes are lightly browned.
Season with salt and pepper to taste.
