Sweet Potatoes Belgian Waffles

Delicious, chewy, and really simple. These sweet potato waffles may be served as a sweet or savory breakfast meal.

½ cup sweet potato or 160grams

1 cup flour (use gluten-free if preferred)

2 tsp baking powder

1 chickpea ‘egg’ (4 tbsp chickpea flour with 4 tbsp water)

1 + ¼ cup coconut milk

1 tsp cumin

1 tsp pink salt

1 tsp paprika

Coconut oil for oiling waffle iron

How to prepare

In a large bowl, combine all of the ingredients and whisk well.

Place the ingredients in a waffle machine and cook until the waffles are done. Top with whatever you like! Use grilled tomatoes, avocado, hummus, and spinach for a savory version, or maple syrup, fruit, and vegan yogurt for a sweet variation.
