Who says vegans can't consume the same foods as the rest of us? These apple-topped pancakes are sweet, fluffy, and delicious.

Ingredients for Pancakes
450 ml (15.2fl oz) milk made from soya
1 tbsp apple cider vinegar
300 g (10.5oz) organic oat flakes
50 g (1.7oz) organic sugar
2 ½ tsp baking powder
1 ½ teaspoon cinnamon
Ingredients for Spicy apples
4 apples
1 lemon (squeezed)
3 tbsp brown sugar
1 tsp of cinnamon
½ tsp nutmeg powder
1 pinch of grounded clove
How to prepare
Peel and core the apples before chopping them into tiny pieces. Combine the lemon juice, sugar, and spices in a pan. Bring to a simmer over medium-high heat, stirring constantly until the sugar has dissolved. Cook, stirring periodically until the apple is tender. Combine the soya milk and apple cider vinegar while the apples are simmering. The mixture will thicken and become buttermilk-like. Blend the oats until they become a fine flour in a blender. Combine the oat flour, sugar, baking powder, and cinnamon in a large mixing basin, then pour in the milk mixture and stir thoroughly. Cook spoonfuls of the batter in a frying pan with a light layer of oil until golden, then turn and cook on the other side.
Serve with apples, maple syrup, and vegan cream or yogurt on the side.
If you have a lot of leftover apple cooking juice, reduce it by boiling it for a few minutes until it becomes syrupy. With the spices, the flavor will be rather strong, but a half teaspoon on top of a pancake with apples and yogurt is excellent.
