You would be surprised to learn that this is comprised entirely of potatoes, carrots, and no cheese! This finger-licking excellent nacho sauce is perfect for taco night or any other cheese desire. ½ cup mineral water, for boiling
2 cups chopped potatoes
1 cup carrots, chopped
½ cup mineral water
1/3 cup avocado oil
1 Tbsp. lemon juice
½ cup nutritional yeast
2 tsp. Pink Salt
¼ tsp. onion powder
¼ tsp. granulated garlic powder
Pinch of smoked paprika
How to prepare it
Boil the potatoes and carrots in a small saucepan with 1/2 cup water until fork tender. Drain the water and put it in a blender.
Combine the remaining ingredients in a blender and mix until smooth. Serve warm or chilled.
