Sorbet made with lemons served in their shells can be found in many coastal restaurants. Granita, the frozen ice that is scraped into tiny ice crystals with a spoon, can also be made using this method.

Ingredients
200g (7oz) superfine sugar
400ml (13fl oz) mineral water
100ml (3.5fl oz) limoncello
Juice of 5 lemons
Pinch of salt
How to prepare it
To prepare sorbet, combine the water and sugar in a small saucepan and bring to a boil. Remove the pan from the heat as soon as the sugar has dissolved and allow the mixture to cool in the refrigerator. In an ice cream machine, combine all of the remaining ingredients and churn until thickened. Instead of ice cream, you can make granitas.
In a small saucepan, combine the water and sugar and bring to a boil. The sugar has dissolved and the liquid is now ready to be poured into a chilled basin. Pour the cooled liquid into a shallow container and put it in the freezer until it's solid. Make big crystals of the mixture by breaking them with a spoon.
