6 slices of bread
1 avocado, peeled, cut into slices
1 zucchini, cut into ½ inch thick lengthwise slices
½ cup fresh spinach (20 g)
4 oz smoked tofu, sliced (about 100 g)
1 green onion, diced
3 tablespoons cashew mayo
4-5 tablespoons vegan cheese sauce

How to prepare it
Place the zucchini and tofu slices on a hot grill pan for 3 minutes, then flip and cook for an additional 3 minutes. Place onto a plate.
Align the bread slices and spread one tablespoon of cashew mayonnaise on each of the three bottom slices. Continue piling the zucchini and tofu pieces, then pour with approximately 2 mL of the melted cheese sauce. Add fresh spinach, green onion, and sprouts, followed by an additional tablespoon of cheese sauce and avocado slices. Repeat until you have assembled three stuffed green cheese sandwiches. Once a cast-iron skillet is heated over medium heat, add the sandwiches. We often prepare this dish without oil, but you can use avocado oil or vegan butter if desired. Press your vegan cheese sandwiches for a few seconds with a spatula, then cover the skillet and cook for 3 to 4 minutes, until a golden crust forms.
Turn the cheese sandwiches over and repeat the process, then take them from the skillet, slice them, and serve them warm.
