Garlic Chickpea and Avocado Hummus Dip

What is the result of combining guacamole with hummus? The ideal party-pleaser, to be precise. This straightforward avocado hummus from the books Fast Easy Cheap Vegan is a delicious appetizer.

Servings 8

Ingredients:

2 cups drained and rinsed canned chickpeas

2 avocados pitted and peeled

¼ cup lime juice 

1 tablespoon olive oil

2 tablespoons tahini

2 peeled garlic cloves

¾ teaspoon salt

1 pinch of black pepper

1/4 cup of chopped fresh cilantro for garnish

½ tsp crushed red pepper for garnish

For serving, tortilla chips, crackers, pita triangles, or veggies.

How to prepare:

Add chickpeas, avocados, lime juice, oil, tahini, garlic, salt, and pepper to a food processor and pulse until totally smooth and creamy, scraping down the sides as necessary.

Garnish the dip with chopped cilantro and red pepper flakes. For dipping, serve with tortilla chips, crackers, pita triangles, and veggies.
