Fava Pistachio Hummus

Serves 2


1 Lemon

1⁄3 cup + 2 tsps Fresh parsley

2 Cloves Garlic

1⁄4 cup Water

1⁄2 tsp Cumin

1⁄3 cup + 2 tsps Pistachios

1⁄2 can Canned fava beans

How to prepare:

Prepare the lemon and fresh parsley by washing them. Parsley is de-stemmed and coarsely chopped. Citrate the lemon. Peel the garlic.

Combine water, lemon juice, garlic, cumin, fresh parsley, pistachios, and half of the fava beans in a food processor or blender. Blend till creamy. (Add additional water if necessary to facilitate mixing.) Add salt and pepper to taste.
