These magical tiny vegan snacks taste just like peanut butter cups, but they're a lot easier to make.
1 cup sugar (powdered)
6 tablespoons graham cracker crumbs (vegan)
¼ cup of peanut butter
¼ cup melted vegan butter
How to prepare
Using parchment paper, line a loaf pan.
To form a thick dough, combine powdered sugar, cracker crumbs, peanut butter, and butter in a medium mixing basin. Turn out the dough into the prepared pan and push it down firmly to cover the bottom. Melt chocolate in a microwave-safe basin in 20-second intervals, stirring as required. Remove from microwave just before it melts entirely and stir to complete the melting process. Spread evenly over the dough base layer.
Freeze for 20 minutes, or until chocolate has hardened. Remove from the freezer, lift out of the pan, and cut into 1-inch squares.
