These enchanted vegan treats have the flavor of peanut butter cups, but are much easier to prepare.
1 cup of icing sugar
Six teaspoons of vegan graham cracker crumbs
¼ cup peanut butter
¼ cup vegan butter, melted
How to prepare:
Line the inside of a loaf pan with parchment paper.
In a medium bowl, combine confectioners' sugar, cracker crumbs, peanut butter, and butter to form a dough. Turn out the dough into the prepared pan and press it down hard to cover the bottom.
In a microwave-safe bowl, melt chocolate in 20-second increments, stirring as necessary. Remove from the microwave just prior to complete melting, and stir to complete melting. Pour over the dough foundation layer and spread evenly.
Place in the freezer for twenty minutes, or until the chocolate has hardened. Once firm, remove the squares from the freezer, remove them from the pan, and cut them into 1-inch squares.
