Almond Miso soup

This simple, nutritious, and speedy soup is a nutritious option for lunch or dinner.

Serves: 1

Ingredients:

1 teaspoon sesame oil

1 carrot, coin-shaped, sliced

2 tablespoons red onion chopped

4 ounces of cubed extra-firm

2.5 glasses of water

1 teaspoon of yellow miso

1 teaspoon smooth almond butter

1 sliced scallion for garnish

How to prepare:

1. In a small saucepan, heat oil over medium heat. Add carrots and onions and simmer, stirring occasionally, for 3 minutes, or until tender. Add tofu and continue cooking for 5 minutes.

2. Add water and raise the temperature to high. Remove from heat and pour 14 cup of hot water into a small bowl. Whisk in miso and almond butter until a paste forms. Add miso mixture into saucepan. In a bowl, ladle the soup and garnish with scallions.
